Without going into much detail, my life recently has been pretty hectic.
Both of my parents are dealing with some very serious health issues. I am the main caregiver or I was, until I ask for help.

For years now, I have handled having two houses.
I have cried myself to sleep sometimes, because, I wanted someone to try and understand what I
was going thru or offer a hand at the times when I felt like I just couldn't take no more.

I have gone to all the appointments, kept track of meds, taken care of the home and so much more.
I recently decided that it is time to assign and delegate some help.
that I had to be everywhere at one time, and it is all right, if I am not.
So, with the help of family and friends I take the next steps forward with a new attitude.
I can't always be there and that's ok.
Caregiver Tips on How to take care of YOU!
- Eat healthy snacks and meals. When you are busy caring for others it may seem easy to eat fast food than prepare healthy meals. But healthy meals will give you the needed energy to get you thru the day.
- Sleep-Make sure to get enough sleep. Take a nap during the day if needed. I adore naps when I can grab one!
- Make time for doing something that you enjoy, crafting, art, reading or taking a hike. Ask a family member to come over for an hour or two to allow you to take a break.
- Make sure that you the caregiver, get medical checkups as needed. Just because you are taking care of someone else's medical needs, is no reason to ignore your own.
- Laugh, even if you have to watch You Tube videos for a few minutes.
- Catch a movie or lunch with friends(Thanks to village of the World's Greatest Girlfriends, who always have my back)
In other words, breathe in and relax and it will all be ok in the long run.
It is easier to take care of yourself and ask for help than run yourself crazy.

I know it is tough to think about but, the ole clock says mid July.
School will be back in session real soon.
Since we can't fight it, let's prepare for it and maybe, relief some stress.
I designed this easy planner to get everything together and
make those first few days of school, stress free.
For now, summer is still in full swing so get outside and enjoy it.
Carowinds- Thanks for the ride Thunder Road!

So, a sad day is coming and once again, I have to see the old change to new and improved,
and it never makes me happy.
Carowinds has been my stomping ground since I was a small child, and Thunder Road, one of the
oldest wooden coasters in the park, is coming down.
July 26th will be the last ride! The coaster was built in the 70's.
Wooden coasters, yes they are rough and a hard ride but, when I get off of Thunder Road I need a
massage to get all the kinks out but, I still love the ride.
I have season passes and go to Carowinds, a lot these days.
I will be riding one last time or two, with my daughter(the thrill seeker), a lot like her Momma,
and hoping that she will share with her children the memories she has of Thunder Road.
This was taken recently, right as the car came to a stop in the station after our ride.
I was shaking to much to get some pics while the ride was in motion.
I love how we got photo bombed, by other riders.

So, yesterday Ella and I were messing around in Downtown Mooresville
and we came upon a new pottery studio that will be opening July 13th.
I pulled over out front and spoke with the nicest lady named,
Brette(owner) of Fired on Broad Pottery.
Brette invited Ella and I inside for a sneak peek of her studio and
what a passion for Art, pottery and teaching she has.
You can feel the positive vibes from the moment you meet Brette.
The studio opens on July 13th and will have children and adult classes, as well as 2 hr day camps

Summer Chicken Salad & Simple Shred method!

I adore Chicken Salad in the summer!
Something about sandwiches that just makes life simple.
This chicken salad has been passed all over
my family and tweaked over the years.
I hope you can enjoy a sandwich this summer.
Somewhere in the back corner of my mind, was this tip my Mom shared with me years ago and for
some reason it came popping out, as I made my chicken salad.
You know after you cook chicken you have to stand with a fork and shred and shred, to try to get it
small enough?
If you have a KitchenAid stand mixer just attach the paddle attachment
and turn it on low for about 1
minute and there you have it.
Easy, simple and perfectly shredded chicken.
Enjoy!
Summer Chicken Salad
prep time: cook time: total time:
ingredients:
- Boil 4 Chicken breast until cooked
- Remove from water and place in mixer to shred the chicken
- Add a cup of Dukes mayo and a squirt of ranch dressing
- Add salt, pepper & garlic to taste
- Add diced celery
- Enjoy!!
