Easy Homemade Chicken Noodle Soup

Hey Y'all, How's it going?
Well for me and my house we are struggling with these short days of cold weather and limited daylight, but we are spending a lot of time inside and that has been really nice. We live in NC and the weather really hasn't been too bad so far, but the weather will get colder in January.
When I was growing up my Mom made all of our meals from scratch and never did we go out and eat. She would stretch food over many meals and leftover night was a real thing in our house.
My Momma had a knack for making an amazing meal for our family of 5, with very little groceries in the kitchen. One-pot meals were her specialty and they never failed to be the soooo good.
As I was thinking about this soup it made me think back to the times when she would use a whole chicken she cut up herself. I will not be cutting a whole chicken, but you are more than welcome too.
My Momma taught me how to cook at a very early age and she always was giving me tips and tricks for shortcuts or substitutions.
I would give anything in this world to have my Momma here now.
I am going to use a rotisserie chicken from the store(gasp) for my soup like I said If you want to cut up a whole chicken, have fun.
I am taking the easier way, but still just as delicious.

If you don't have all of these spices and herbs on hand, do not go out and buy them. This soup will be great with whatever you have.
Easy Homemade Chicken Noodle Soup
Ingredients:
1 cup carrots, peeled and sliced thin
1 cup celery, sliced thin
1 cup yellow onion, diced small
1 tablespoon garlic powder
2 bay leaves
1 teaspoon fresh thyme
1/2 teaspoon dried oregano
1 teaspoon pepper
3 tablespoons parsley chopped
2 tablespoons olive oil
64 oz.(8 cups) chicken broth
12 ounces wide egg noodle
2 cups shredded rotisseries chicken
- Add the olive oil to a large stockpot and heat over medium heat.
- Add the carrots, celery, onion, and saute for about 6 minutes or until vegetables begin to soften.
- Add the garlic powder, chicken broth, bay leaves, thyme, oregano, and pepper, and bring to a boil.
- Allow it all to boil for about 12 minutes
- Add the egg noodles and for another 12 minutes or until the noodles are soft. You may need to add more broth as the noodles will absorb the moisture.
- Add the chicken and parsley and boil until chicken is warm and incorporated into the soup. Taste and see what it needs more of.
- Add more salt or spices if needed. Remove the bay leaves and enjoy!

I just couldn't pass up the chance to enjoy this Cheesecake Creme Brulee and it was perfect.

Baked Mac & Cheese-the last recipe you will ever need.

I want to share our favorite Baked Mac & Cheese with you.
This is a simple and delicious dish and really easy to prepare, even on a weeknight.
Also, if you are in the mood for sharing, this is the perfect dish for a potluck.
Baked Mac & Cheese
1 package(7oz) elbow macaroni
3 tablespoons butter, divided
6 tablespoons all-purpose flour
2 cups milk
1 package(8oz) cream cheese, cubed
2 teaspoons spicy brown mustard
1/2 teaspoon of salt
1/4 teaspoon of pepper
3/4 cup dry bread crumbs
2 tablespoons minced fresh parsley
Cook macaroni according to package directions.
Meanwhile, melt 4 tablespoons butter in a saucepan.
Stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes. Reduce heat; add cheeses, mustard, salt, and pepper. Stir until cheese is melted and sauce is smooth. Drain macaroni; add to the cheese sauce and stir to coat. Transfer to a greased shallow 3 qt baking dish. Melt the remaining butter; toss with bread crumbs and parsley. Sprinkle over macaroni.
Bake uncovered, at 400 degrees for 15-20 minutes or until golden brown.
Makes 6-8 servings

How to Host a Stress Free Holiday Open House

The holidays are perfect for hosting a holiday open house.
It gives you a chance to open your home, without the stress of a huge dinner party.
Here is what you need to host an open house
that will become a tradition.
~Set The Date~
Send out invitations thru the mail or social media but, make sure you give your guests plenty of time to put it on their calendar.
The holidays can be extremely busy.
*Also, make sure to note on the invite if children are invited.

~Prep~
Plan the food and drink menu. Think about foods that do not need to be heated. Snack trays, nuts, chips things like that are good sitting out. Make sure it isn't anything to difficult to hold as your guest may be standing while eating.
You can use disposable dishes if you would like but, to really set the tone as classy, I will be using small appetizer plates.
~Set The Scene~
Candles, music, twinkling lights are a great way to set the mood and tone of the open house. Set up chairs into small conversation areas around your home. This keeps the flow moving and gives people a chance to get to know each other.
When I host a party in the winter, I like to light a fire in the fire pit on the back porch and make sure my outside lights are on. If someone wants to walk outside, it just makes for a nice touch instead of total darkness.
Make this easy simmer pot to give your home a yummy smell
1 whole orange
1/2 cup cranberries
1 tbsp. whole cloves
3 cinnamon sticks
a pinch of nutmeg
Combine ingredients with water and simmer on low throughout the party
Give your guest small favors such as homemade cookies, an ornament or small Christmas tree or poinsettia.
Have Fun! Give yourself time to freshen up and get ready for your guest. Mingle and spend time with your family and friends.
