Summer Chicken Salad & Simple Shred method!

I adore Chicken Salad in the summer! 

Something about sandwiches that just makes life simple. 

This chicken salad has been passed all over 

my family and tweaked over the years.

 I hope you can enjoy a sandwich this summer. 

Somewhere in the back corner of my mind, was this tip my Mom shared with me years ago and for 

some reason it came popping out, as I made my chicken salad.

You know after you cook chicken you have to stand with a fork and shred and shred, to try to get it 

small enough?


If you have a KitchenAid stand mixer just attach the paddle attachment 

and turn it on low for about 1 

minute and there you have it. 

Easy, simple and perfectly shredded chicken.

Summer Chicken Salad

ingredients:

  • Boil 4 Chicken breast until cooked
  • Remove from water and place in mixer to shred the chicken
  • Add a cup of Dukes mayo and a squirt of ranch dressing
  • Add salt, pepper & garlic to taste
  • Add diced celery
  • Enjoy!!
